Instead of canned tomatoes, I used fresh cherry tomatoes that I cut in half. I used one pint. I also used one large red pepper instead of green only because we do not like green peppers. The dressing I used was Newman's Own Family Recipe Italian dressing. I made this in the early afternoon and let it sit in the fridge until dinner--I really think that really is what made this salad. My family enjoyed this salad. Next time, I think I'd use another vegetable instead of carrots, only because I thought the carrots seemed to be out of place in this salad. (That's not a reflection of a recipe, just a personal opinion, really.) I think this would be good with quartered zucchini.

This is awesome. Instead of canned tomatoes I used fresh, left out the olives and used turkey pepperoni. I loved it as did my family. This will be great for summertime cookouts.

I made this for my vegetarian wife. My children and I are not. We all loved it. We ate it hot off the stove and then we ate it the next day cold. Both times were excellent. I marinated the artichokes my self that was the only thing different. I cant recommend this enough!
