INGREDIENTS
3 ounces uncooked spaghetti
1 small onion, chopped
1/4 cup chopped green pepper
2 tablespoons butter
2 Italian sausage links, casings removed
1 cup sliced fresh mushrooms
1/4 cup sliced ripe olives
1 1/2 teaspoons Italian seasoning
1/4 teaspoon salt
1 cup heavy whipping cream
Shredded Parmesan cheese

DIRECTIONS
Cook spaghetti according to package directions. Meanwhile, in a small skillet, saute onion and green pepper in butter until crisp-tender. Crumble sausage over vegetables; add mushrooms. Cook over medium heat until meat is no longer pink; drain.
Stir in the olives, Italian seasoning and salt if desired. Add cream; bring to a boil. Reduce heat; simmer, uncovered, for 10-12 minutes or until thickened. Drain spaghetti; add sauce and toss gently. Garnish with Parmesan cheese if desired.

Nutritional Analysis: 1-1/2 cups (prepared with turkey Italian sausage) equals 901 calories, 69 g fat (38 g saturated fat), 254 mg cholesterol, 1,014 mg sodium, 44 g carbohydrate, 3 g fiber, 29 g protein.

I browned the sausage first and then added the veggies and some other seasonings. Overall, I thought it was a bit dry and really missed having tomatoes. Ended up pouring in a jar of vodka sauce, then it was terrific.

My husband said that this is his favorite spaghetti of all time. I did add crushed tomatoes because we like them. But I tasted it prior to that and it was still VERY good, that's why I still give it 5 stars.

This has become a staple of mine. I use sliced canned black olives and low fat italian turkey suasage and they really go nicely together. I sometimes replace the cream with low fat milk to reduce the fat content, and it doesn't seem to hurt the recipe. I also add at least a half cup of water to the sauce so that it lasts longer.

This is wonderful! I made it with bulk Italian sausage and canned mushrooms (that's what I had on hand) and it turned out fantastic. Will def. be making this again! Thank you.
