Ingredients

  • 1 pound Bob Evans® Italian Sausage Roll
  • 2 (14.5 ounce) cans Italian-style diced tomatoes
  • 2 (14.5 ounce) cans beef broth
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • 1 (16 ounce) package frozen Italian blend vegetables
  • shredded Parmesan cheese to taste

Directions

  1. In a Dutch oven, crumble and cook sausage over medium heat until browned; drain. Add tomatoes, beef broth, beans, frozen vegetables. Bring to a boil. Reduce heat to low and simmer. Cook 7 to 10 minutes or until vegetables are tender, stirring occasionally.
