I made this recipe with a few changes based on preference and items on hand and it was AWESOME. I read some reviews and adjusted accordingly.
-1lb Hot italian sausage
-2 cloves garlic
-1 med. sweet onion
-1 big baking potato, cubed
-2 cans diced tomatoes (1 petite, 1 italian flavored)
-24ish oz beef broth
-1cup julienned carrots
-wilted in about 2cups frozen spinach after removing from heat
I did this all in the dutch oven and subbed the potato because my husband does not like beans, and left out the zucchini because I had forgotten to buy some. Other than that, this was a WONDERFUL soup and didnt require any additional seasoning (besides some pepper) because the sausage did that all on it's own. I toasted up some ciabatta bread to go with it but it was perfect all on it's own. For my daughters, I added some pre-made wheat elbows to give it more substance, and I bet adding some sort of pasta in it would be good too. definitely a make-again!
