I omitted the zucchini and it was still delicious! I have made this several times with different kinds of sausage, so use what you like. Also, whether using fresh or frozen spinach, it still comes out terrific!

Absolutely wonderful flavor. Wow, so simple yet so delicious. I have a sausage shop close by that makes great sausage, that probably helps. Also used up the last of the homemade turkey stock from Thanksgiving instead of beef broth. Otherwise stuck to the recipe. You need to try this, and read some of the suggestions as you'll want to make this over and over.
