Surprisingly delicious! I'm giving it 4 stars because I prefer to use spicy Italian sausage...which makes it a 5-star recipe. Super easy, SUPER DELICIOUS! I ate about 4 bowls immediately after making it.

So easy and so good! I made it as suggested but added some pasta to stretch it out! My children and husband don't like zucchini, tomatoes or spinach but they love this soup.

This was delicious and so fast and easy to make! I got 4 fresh sausages from the butcher - 2 honey garlic, 2 hot and used a veggie broth. I will add more broth next time as the next day when I reheated leftovers I found I wanted more juice for dipping! I ate the soup with fresh french baguette mmmm. I brought some to my parents and they loved it so much they went out and bought the ingredients to make it the next day! Thanks you so much...healthy and amazing!

Very good, and what great vegetables. I used hot sausage, extra garlic, chicken broth instead of beef, and extra tomatoes. I used 1 low fat/sodium broth and 1 regular and did not add any salt, but I thought it was on the salty side. Not sure why. If I can reduce the salt flavor, I would top with grated parmesan.

I made this recipe as written, and the soup was wonderful. I used sweet italian turkey sausage removed from the casing. The prepped vegetables looked beautiful on my counter -- the fresh green spinach, the deep orange carrots, the crisp zucchini dices and the fragrant garlic... this soup is nutritious and delicious!

So great -but I used suggestions from others. First I used turkey italian sausage to reduce fat, used 2 cloves of garlic and added a small chopped onion, used cannellini beans instead of great northern, and used potato cut into small chunks instead of the zucchini, used Ox's no-sodium beef broth packets & omitted the salt and it was still salty enough. Last time I made it I threw in a handful of tiny pasta but it really doesn't need it -this is a filling soup full of vitamins. The fresh spinach added at the end really makes it!

This recipe blew me out of the water. I was not expecting for it to be as tasty as it was. I'm not big into soups, but I can guarantee I will probably make this recipe a dinner staple. I served it with the 4 Cheese Margherita Pizza (recipe here on allrecipes.com) and it was a family hit. Versatile recipe though, I can imagine alot of stuff it would be good with, anything starchy.

you can't mess this up. i add whatever canned beans i have. try adding pasta too. just boil pasta seperately and add to soup. that way it won't absorb the yummy broth. my hubby and kids love this.

Sooo good! I used half sweet and half spicy sausage. I also drained the fat before adding other ingredients. Also I used half beef and half homemade chicken stock, so I had a little chicken in the soup too. Finally I added about 1/3 c. barley because I'm trying to increase my whole grains. Absolutely delicious. Thanks!

This soup has become a regular at our house. I make it just as the recipe states and it's fabulous! Leftovers are just as good as fresh from the pot. Bake some homemade bread and you're all set!

This soup was delicious. My husband and I both tend to load our food up with spices, and I worried that this would not be flavorful enough. We used hot Italian sausage, though (and low sodium broth), and neither of us felt like the soup was wanting for anything. I will definitely make it again!

I really am not a fan of broth-based sopups although I will prepare them and make them but this soup had completely changed my mind. It blows my mind how simple amd delicious it is. I used "Johnson's mild Italian sausage" and oh so yummy!!! I also upped the garlic added a sweet onion, increased the broth to about 2 L, doubled the tomatoes and also added about 1/2 TBSP of italian spices. My hubby thought it was great also. With my changes this soup will feed many many people I have tons of leftovers in the fridge and also froze some. I think I'm going to try adding some kind of starch next time. Thanx for sharing such an amazing recipe!!

This was an awesome soup! I used Italian Turkey sausage because I'm always looking for ways to lighten up recipes. I also added an onion when sausage partially browned and upped the garlic to 3 cloves and added some oregano with beef broth, etc. Really good, will make it again.
