Like everyone says- this is excellent! Judging by the name, I wouldn't have thought this to be so good! I did use 2# of italian sausage instead of 1, and it was perfect. I used half frozen spinach, half fresh spinach. My boyfriend added rice to his, and next time I may add corn. I will definetly make this again soon!

This is awesome soup. I am not a great cook and tried this and it came out perfect. I used a frozen spinach box, as suggested by others and it was great. Full of flavor and easy! It was even better the next few days! I am making a batch for a party this weekend. Can't wait!!

The best!! Changed I made: chicken broth instead of the beef, sauted 1 chopped onion and celery. Used white kidney beans, fresh baby spinach 1/4 cup small pasta soup noodles. Someimes, I make mini meatball with ground pork, ground beef, 1 egg, bread crumbs and parsley. I roast the meatballs and throw them in the soup. Be careful not add too many meatball...you don't want a super thick soup. It is so good!

Very yummy and fast to make, what a combo! I used low sodium beef broth and left out the salt. I also used frozen chopped spinach that I thawed before using. So much easier! This made a great meal!

Terrific! I substituted half pound of Italian Turkey Sausage from Perdue and cut the beans in half. It staid within the WW points I allow for dinner. (Can't give points in this forum but let's just say I cut them by more than half.)

always use fresh ingredients spices as well! in my opinion this is the best soup recipe on this site...probably the best and most practical recipe on allrecipes. i love this! thanks for posting this. i can make a nutrious, healthly, cost-efficient, freezeable, main dish with usually things i have on hand. i can also sub. out ingredients at will. terrific stuff. highest rating from here!!

This was very good! I added wheel macaroni noodles and scallions and had fresh bread and butter for dipping. My boyfriend loved it! It was very hearty, great dinner after a long, hard day in the cold. Thanks for the recipe!

This recipe was absolutely fabulous! The only thing I did differently was to add an extra can of beef broth. I had never used those beans before but they were good. I did freeze half of it and the beans got a little mushy on the reheat. Next time, I will remove the beans from the portion I freeze. Definately make this recipe - you'll love it!

Very good soup and a great opportunity to eat lots of vegetables! I added an onion, extra broth and about a cup of rice to the soup. I also sprinkled some Italian seasoning into the soup and used frozed chopped spinach instead of fresh. I put the stewed tomatoes in the food processor to chop them up before adding them to the soup. It was good stuff!

This soup is excellent! Everybody I've made it for loves it. Especially me! My parents, who have become food connoisseurs in their golden years, have made it one of their favorites. The only change I've made to the recipe was to add and extra can of beans and more garlic. Thanks for a great soup!

This soup was excellent!! I used hot, spicy sausage and added minced onion when browning. The last 10 minutes of cooking, I threw in mushroom tortellini. This will definately be a staple in my home. I can't wait to eat the leftovers! Thank you, thank you for a delicious easy recipe.

this is delicious,nutritious,and can be made in a snap.Only changes were to use turkey italian sausage,an onion, and cannelini beans. great and hearty with a nice slice of homemade sourdough. thanks for this keeper recipe.
