Nice, basic recipe for the humble but delicious Minestrone, with plenty of wiggle room for your own creativity or to use whatever vegetables are to your liking or what you have on hand. I made my own beef broth and along with the sausage I included the beef from the meaty bones I used. Added celery, onions and mushrooms with the carrots, along with some Tuscan seasoning. I used cannelini beans since I prefer them, and at the end threw in ditalini pasta (about 1 c. uncooked) which I had cooked ahead of time so the pasta wouldn't absorb too much of the broth. Instead of the canned tomatoes I used tomatoes I had put up from my garden. There really is no right or wrong when making Italian soups like this, and the fun thing about it is that it never turns out exactly the same way twice! Sometimes I like to add a glug of red wine, or maybe rice, or various shapes of soup pasta. I did use fresh spinach this time, but Swiss Chard or escarole are nice too! To truly be authentic, sprinkle each serving with good, freshly grated Parmesan or Romano cheese!

Wow!! This is one of the best soups I've ever tasted! I gave 4 stars only because I made two changes- I used spicy italian sausage and added about 1 1/2 cups cooked miniature pene pasta. I took it to a carry-in lunch and got rave reviews from everyone! It was a very simple and healthy dish that I will make over and over!

Surprisingly delicious! I'm giving it 4 stars because I prefer to use spicy Italian sausage...which makes it a 5-star recipe. Super easy, SUPER DELICIOUS! I ate about 4 bowls immediately after making it.

So easy and so good! I made it as suggested but added some pasta to stretch it out! My children and husband don't like zucchini, tomatoes or spinach but they love this soup.

This soup is really good! I just made a big pot so I could freeze some for a friend who has a broken hip. I did make the following changes which I think improved it: use sweet Italian sausage, use 3 cans beef broth, add 1/2 diced onion and a sprinke of red pepper flakes when browing sausage, coarsely chop the tomatoes before adding and only use 1 cup torn spinach. I will be adding this to my favorite soups list.

This was delicious and so fast and easy to make! I got 4 fresh sausages from the butcher - 2 honey garlic, 2 hot and used a veggie broth. I will add more broth next time as the next day when I reheated leftovers I found I wanted more juice for dipping! I ate the soup with fresh french baguette mmmm. I brought some to my parents and they loved it so much they went out and bought the ingredients to make it the next day! Thanks you so much...healthy and amazing!

Very good, and what great vegetables. I used hot sausage, extra garlic, chicken broth instead of beef, and extra tomatoes. I used 1 low fat/sodium broth and 1 regular and did not add any salt, but I thought it was on the salty side. Not sure why. If I can reduce the salt flavor, I would top with grated parmesan.

I made this recipe as written, and the soup was wonderful. I used sweet italian turkey sausage removed from the casing. The prepped vegetables looked beautiful on my counter -- the fresh green spinach, the deep orange carrots, the crisp zucchini dices and the fragrant garlic... this soup is nutritious and delicious!

So great -but I used suggestions from others. First I used turkey italian sausage to reduce fat, used 2 cloves of garlic and added a small chopped onion, used cannellini beans instead of great northern, and used potato cut into small chunks instead of the zucchini, used Ox's no-sodium beef broth packets & omitted the salt and it was still salty enough. Last time I made it I threw in a handful of tiny pasta but it really doesn't need it -this is a filling soup full of vitamins. The fresh spinach added at the end really makes it!

Sooo good! I used have sweet and half spicy sausage. I also drained the fat before adding other ingredients. Also I used half beef and half homemade chicken stock, so I had a little chicken in the soup too. Finally I added about 1/3 c. barley because I'm trying to increase my whole grains. Absolutely delicious. Thanks!

This recipe blew me out of the water. I was not expecting for it to be as tasty as it was. I'm not big into soups, but I can guarantee I will probably make this recipe a dinner staple. I served it with the 4 Cheese Margherita Pizza (recipe here on allrecipes.com) and it was a family hit. Versatile recipe though, I can imagine alot of stuff it would be good with, anything starchy.

you can't mess this up. i add whatever canned beans i have. try adding pasta too. just boil pasta seperately and add to soup. that way it won't absorb the yummy broth. my hubby and kids love this.
