This soup is similar to Jackie's Sausage Soup (also on this site). Made this for dinner last night. My bf and I both enjoyed it (I like this better than Jackie's soup - my bf can't comment since I made it when he was out of town)! I pretty much followed Mary's directions to the letter other than subbing 2 (14.5 oz.) cans of organic petite diced tomatoes for fresh (didn't have time to boil/peel/dice them), Italian seasoning for oregano (I couldn't find the bottle of oregano I just bought - argh!) and dried, tri-colored cheese tortellini for the fresh stuff. Other than these three minor changes, I followed the recipe exactly. I only needed two medium-sized carrots and one medium zucchini as Nikki suggested (right on!). Next time, I'd like to substitute pesto filled tortellini (sold at Trader Joe's) and spicy sausage just to try something different (and give the soup a little "kick"). Garnished bowlfuls with shredded Parm and some fresh chopped basil (a definite must) and served with ciabatta rolls and the rest of the cabernet sauvignon wine I used in the soup.
