I made this without the sausage for more of a vegetarian meal(not vegan...cheese tortellini) and it was AMAZING! I'm sure the sausage adds a lot, but having never had it with the sausage, I thought it was delicious!

One of the best dishes I've ever gotten from here. I really was a hit with my family after making this. I did use Hot instead of Sweet Italian Sausage and it was very well received! I will make this again and again.

Delicious! Best soup I've EVER made. Was like eating in a rustic Italian restaurant.. Serioiusly, I can't say enough of this recipe.. so comforting. I made as written, but used roma tomatoes and left the skin on. I used sweet Italian sausage, and a good Merlot oooh and a huge loaf of french bread, even my children ate 2 bowls each.. A FANTASTIC way to impress anyone. My only issue is cutting down on the grease from the sausage.. you should spoon as much off as you can.

So good my son, the picky eater, gobbled up an entire bowl and ask for seconds! I used canned peeled, diced tomatoes. Instead of water I just added more beef broth. Followed everything else to a T! Served it with crusty bread. Will definately make this one again.

VERY good, really easy, and a big hit for dinner parties... i haven't tried this yet, but thinking i will just get a bag of frozen italian veggies and add to this next time. i used canned peeled diced tomatoes and it was fantastic. i'll probably add mushrooms next time too.

This soup is really great I've cooked it many times and my boyfriend loves it because it is so hearty! I deviate a little bit, I use turkey sausage instead of italian sausage and I use bow tie pasta instead of tortellini! I also add two red potatoes and in an effort to reduce preparation time I use a 14oz can of diced tomatoes instead of chopping up four individual tomatoes. It always turns out great!

This soup is similar to Jackie's Sausage Soup (also on this site). Made this for dinner last night. My bf and I both enjoyed it (I like this better than Jackie's soup - my bf can't comment since I made it when he was out of town)! I pretty much followed Mary's directions to the letter other than subbing 2 (14.5 oz.) cans of organic petite diced tomatoes for fresh (didn't have time to boil/peel/dice them), Italian seasoning for oregano (I couldn't find the bottle of oregano I just bought - argh!) and dried, tri-colored cheese tortellini for the fresh stuff. Other than these three minor changes, I followed the recipe exactly. I only needed two medium-sized carrots and one medium zucchini as Nikki suggested (right on!). Next time, I'd like to substitute pesto filled tortellini (sold at Trader Joe's) and spicy sausage just to try something different (and give the soup a little "kick"). Garnished bowlfuls with shredded Parm and some fresh chopped basil (a definite must) and served with ciabatta rolls and the rest of the cabernet sauvignon wine I used in the soup. YUM YUM YUM!!! This is sooo good! I suggest using the FRESH chopped tomatoes instead of canned. What a huge difference! Also, I used spinach tortellinis and it was so colorful and delicious! To save time, instead of using sausage in their casings, use ground italian sausage. I added chopped kale with the zucchini for added color and nutrition. I absolutely recommend this dish!!!

My husband and I have made this several times and it comes out perfect every time. For convenience's sake, I used canned whole tomatoes instead of fresh. Also, when I doubled the receipe, I used half vegetable broth and half beef broth and it turned out great!

Wonderful! We love this soup - made it again last night for about the 10th time. Have taken the advice of others and used all broth and added a little garlic - other than that followed exactly and you just can't get any better! Thanks for a great recipe.

Very good! Even my kids, after initially whining about the zucchini, said they loved it! I made a few substitutions. I substituted 1/2 a can of crushed tomatoes for the 4 large tomatoes (because my children hate chunky tomatoes) and I used spicy italian sausage. And I added some crushed red pepper, because we like things spicy. I also made the tortellini separate. I hate it when pasta is in soup and gets huge and soft. And I never took out the sausage, I just added the ingredients in the order that the recipe said.

Very, very good soup! I omitted the red wine, only because I didn't have any on hand and used canned tomatoes. Next time, will definitely use fresh. Delicious anyway!!
