this recipe was so good!! it has really good bones, and though i did make many modifications, it was only because i wanted it, not because it was needed. i used a roll of medium hot sausage, because it was on sale. to compensate, i added italian seasonings while browning along with a teaspoon of fennel, because i think that fennel complements the flavor of sausage. i also added cayenne pepper for kick, and allspice, because it complements the flavor of the tomatoes. i used crushed tomatoes instead of fresh because they were also on sale and for convenience. i sauteed leeks along with the onions and garlic, and i used 6 oz. of wine instead of just 4 oz. i used about an extra cup of beef broth, and omitted the water. i substituted quartered baby portabellas and spinach for the zucchini, and i started to forego the tomato sauce, but decided to add it. i am so glad i did because it gave the broth a really silky texture. i added frozen tortellini (also on sale) the last 5 minutes, then i let it sit for ten minutes before eating. finally, i topped it with parmesean cheese (on sale, of course). amazing!! this soup was so awesome, i ate almost 3 bowls with crusty bread and butter! mmmmm! fabulous recipe, and it is hearty without sending you into a food coma! the best part is the recipe made plenty and cost about 13 bucks to make! i freezed the rest and will be making this again.... kudos, mary p.!!

I have made this a few times now. My husband loves it. The only thing i did different is i didnt add zucchini. Its a great recipe

We tried this recipe last weekend and LOVED it! We did elect to use chicken broth instead, and also took another user's recommendation and used a squash medly rather than zucchini. We almost made it again this weekend! Dee-lish!

This was great....especially because I have a family that doesn't like vegetables very much. They all ate it down and asked for leftover for lunch the next day. The only thing I did different was use bow tie pasta instead of tortelini. Great dinner for chilly fall nights!

This soup is out of this world! I used my crock pot. The night before I sauteed onion and garlic; cooked a pound of hot italian sausage; diced 3 medium carrots; used the last of my garden tomatoes plus one can of diced tomatoes; and 2 medium zucchinis. I put the onions/garlic, carrots, tomatoes and half of the sausage in a bowl. I put the zucchini in a zip top bag and the other half of the cooked sausage in its own bag and put everything in the fridge til morning. I set out the needed spices, red wine and beef stock on the counter, so early the next morning I threw the meat/veggies I had in the bowl in the crock pot (minus the zucchini at this point). I used all beef stock, no water. I upped the spices called for to my liking, and added about 3 Tbs of tomato paste because I needed to use it up. Cooked on low. After about 4 hrs, I put in the zucchini. I let it go another 3 hrs or so, tossed in the fresh pasta (I used mini cheese ravioli). Half hr later, the soup was done. Using half the amount of hot sausage was perfect. It was plenty spicy. You can always add more of the sausage if it's not spicy enough but you can't take it out if it ends up too spicy. Positively magnificent. Make this a regular in your rotation! It was served with whole grain garlic bread and green salad.

Made this last night and everyone loved it. Followed the recipe except for using canned diced tomatoes and omitting the carrots. Using the fresh herbs is worth the extra time. I'm already looking forward to eating the leftovers for lunch!

No complaints at all. Out of necessity I first made it with chicken stock and white wine and it was great. Soooo good with both chicken and beef stock (with white and red wine respectively).

I LOVED IT! I only gave it four stars because 2 of 3 kids didn't like it, but I'm already planning of ways to present it differently (like maybe adding some rice, celery, etc.). I made it as is, and my husband, daughter, and I loved it. Thanks for this great recipe!

I soaked up as much drippings as I could with a paper towel before adding the beef broth, etc. because it is much quicker than skimming the top. We thought this was pretty good as written but just needed something more for our taste. I ended up adding a good amount of Italian seasoning, a bit of fennel seed, and a can of Rotel tomatoes. The green chili in the Rotel was a nice addition. As I stated a pretty good recipe as written, we just prefer stronger flavor.

It was ok, followed to the t and just had an odd flavor, so then i added little hotsauce and a few other spices and it was a little better, but original recipe was just an unusual taste. If you decided to make i would use sausage links and fry in pan w/ skins sliced and then add to soup. I personally would not make this again. My mom who could not wait for it to be finished because it smelled so good took turn with my husband giggling and trying to be polite.
