I love Italian dressing, and a great "short cut" to get there in a pinch when you're short on time yet still have great flavor is to use "Good Seasons" salad dressing mix. I love the "concept" of this, however I think the measurements may be off... This calls for way too much sugar, vinegar, water, and oil unless the packet they're referring to is huge. The packet I used was 0.7 oz. so I used 1/4 cup of white wine vinegar, 3 Tbsp. of water, and 1/2 cup of olive oil then added the garlic and 1 tsp. of sugar. You can even lighten this up even further by replacing 1/4 cup of oil with 1/4 cup of water and using 1/2 tsp of splenda instead of sugar.
