This was good i did leave out the mushrooms as im not a fan. i did mark thisdown i felt it needed more spice/flavor it was a tiny bit bland next time ill add more garlic and some crushed red peppers. other than that it was very good and easy!!! thanks for posting!!

This was a very good way to use up leftover pork roast. I used regular white rice: separated the tomatoes from their juice and topped up the juice with chicken broth to make 2 cups - added that to the sauteed veg & pork, brought to a boil, added 1 cup rice, covered and simmered for 20 minutes. I also stirred in grated parmesan just before serving. Turned out great!

I loved it!!!! I am from New Orleans and this reminded me of many dishes we make it the south, bu this one is much easier. So it gives you the complex flavor of southern dishes without all the fuss!! :). I will make this a regular meal in my house. Thank you for the recipe!!! :) I didn't have diced tomatoes, so I used Italian stewed tomatoes. I thought the rice would be uncooked if I did it according to the directions, so I just left it on low for about 10 minutes. It was perfect! i got one bowl and my bf ate the rest of the pot! he wiped it clean.

Everyone really liked this including all but my littlest one (who hates ALL vegies). My husband who is from the south loved this. Thought it tasted like Southern dishes he grew up with even though it's "Italian". I didn't change anything except one of my cans of diced tomatoes I had on hand wasn't Italian, but had onions, celery and green peppers in it. We will likely make this fairly often as it was SUPER easy to throw together. Would also be great with leftover cooked chicken or with shrimp or any combination of the meats! I put out Louisiana hot sauce, red pepper flakes so everyone could spice it up to their taste and served with warm french loaf. Yum!
