4 (6 ounce) fillets orange roughy
1/4 teaspoon lemon-pepper seasoning
1/4 teaspoon salt
1/4 cup finely chopped onion
1/4 cup finely chopped celery
1 (14.5 ounce) can Italian diced tomatoes, undrained

DIRECTIONS
Arrange fish fillets in an ungreased 13-in. x 9-in. x 2-in. baking dish. Sprinkle with lemon-pepper and salt. Cover with onion and celery. Top with tomatoes. Bake at 350 degrees F for 30-40 minutes or until fish flakes easily with a fork.

Nutritional Analysis: One serving (1 each) equals 145 calories, 1 g fat (0.55 g saturated fat), 34 mg cholesterol, 620 mg sodium, 7 g carbohydrate, 2 g fiber, 26 g protein. Diabetic Exchanges: 4 very lean meat, 1 vegetable.

Wow! This was excellent. I sprinkled a little bit of shredded parmesan over the top before popping it in the oven. Really good for being so easy and quick!

I was hesitant to try this just because the idea of tomato with fish didn't really turn me on but boy was I wrong! This was exceptional and so easy. It is going to be a staple at our house. I am cooking for someone that requires a very low sodium diet so I replaced the canned italian tomatoes with fresh romas and some italian seasoning - it was great! I signed up on Allrecipes just so I could add a review on this recipe - that's how good it is!

This recipe is FABULOUS!!! I cooked for two so I coated a baking dish with foil then prepared AS DIRECTED except I only used half a can of the tomatoes and lots of extra celery (I loved them in this dish!). I baked for about 25 minutes for two filets. Truly this was very unexpected great flavors and textures! Oh and you HAVE to sprinkle parmeasan cheese on top for the last few minutes of baking. Thanks for this recipe...its a keeper! PS - I used tilapia filets!!!

I did not find this good at all. Neither did my fiance'. I don't know if I did something wrong, but I usually have no problems cooking fish.

I'm not sure why this happened, but even after an hour the fish was still undercooked and soggy, and the flavors were unappetizing. Maybe we're just not orange roughy people.
