My first meatloaf and what a hit !!! Although rolling it up was a challenge, it held together. Couldn't wait to make cold meatloaf sandwiches.

I made this for dinner last week....very different from my current recipe, but it was by far the best meatloaf I've ever made. My husband raved about it and took it work for leftovers the next day (then came home telling me his buddy wanted the recipe too.) Def. in the dinner rotation around here!

I love meatloaf as a rule; however, this meatloaf was amazing and worthy of saving to my recipe box. I actually made this while I was supposed to be on bedrest from a ruptured disc and ended up having to leave it in the fridge for two days. My husband took care of cooking it in the microwave and it turned out so good. I am not sure that it's 2 day stay in the fridge helped or hindered it, but I am sold on this recipe. Good Job!

Love, Love, Love this recipe!!! The only changes I made were..I used 1 1/2 lb of ground beef and a half pound of sweet italian sausage and I added some italian seasoning, used red and green pepper...cooked it in the oven for an hour...covered the loaf in the sauce and cooked for another 15-20 minutes....DELICIOUS!! Served with a side of twice baked mashed potatoes...weird combo but it worked!

I had been looking for a good meat loaf recipe and I have found it. This is a nice and hardy dish, very meaty and savory. I used Italian style bread crumbs and baked the loaf at 350 for 1hr15 on a baking sheet. Spreading the meat into a foil sheet and then rolling it into a log is a great idea. My loaf turned out very smooth and symmetrical. I did not seal the ends well enough because some of the cheese oozed while baking, but there was still plenty inside. This recipe is a definite keeper. I'll try to add veggies in the future and see how it turns out. Thanks Lisa :)

I also made this in the oven. Only I added garlic powder and Italian seasoning, and used some left-over marinara sauce I had. It was super simple, and turned out great! I will make this again.
