Well,I can't believe it, but I followed the original directions exactly and my husband loved it! I've botched every meatloaf recipe handed to me and the microwavable one was the one that turned out to be the moistest and most delicious of all the ones I've tried...including Emeril's!!! Worth repeating!

I made some substitutions because I didn't have some of the ingredients (used a mexican mix of cheese, with cheddar, instead of mozzerella and ketsup instead of tomato sauce). I cooked it 1 hr 30 min at 350. It turned out a little soggy/mushy where the cheese was...not sure if it was because of the substitution. It tasted good though and my hubby still ate it.

My Hubby, Twins and I all loved this recipe! I cooked it in the oven versus the microwave and followed another reviewers suggestion of 350 degrees for 1 hour 15 minutes...it turned out so yummy! We are excited to eat leftovers the next night. Thanks for sharing such a great recipe...definitely will become a staple in our household! :)

I cooked it in the oven at 350 degrees for 1 hour and 15 minutes. After cooking, let meat loaf sit for 10-15 minutes so that it doesn't fall apart. Very good.

A wonderful twist to an old classic!! This is sure to become a regular favorite in our house. The only changes I made were replacing the green peppers with some red, orange, and yellow, and I used crushed up saltines instead of the bread crumbs, because that was what I had, and I cooked it in the oven at 350 for an hour draining off the grease twice, topping with sauce then cooking 20 min longer instead of the microwave. Turned out very moist and flavorful. Lisa, Thanks for the new family favorite!!

Lisa! Awsome recipe! I did everything you said except the green pepper. I only had red. It worked. My husband loved it. I loved it. I was so proud at how it came out that i served it to the neighbors and they loved it. I added some cut up potatoes and baby carrots and cooked it it the oven at 350 instead. What a great recipe. Kudos!!!!
