INGREDIENTS
2/3 cup biscuit/baking mix
1/3 cup grated Parmesan cheese
2 teaspoons Italian seasoning
1 teaspoon paprika
1 (5 ounce) can evaporated milk, divided
6 boneless, skinless chicken breast halves
2 cups boiling water
2 cups uncooked instant rice
1 teaspoon salt
2 tablespoons butter or margarine, melted

DIRECTIONS
In a large resealable plastic bag or shallow bowl, combine the first four ingredients. Place 1/3 cup milk in another bowl. Dip chicken in milk, then coat with the cheese mixture. In a greased 13-in. x 9-in. x 2-in. baking dish, combine water, rice, salt if desired and remaining milk; mix well. Top with chicken. Drizzle with butter. Bake, uncovered, at 425 degrees F for 25-30 minutes or until the rice is tender and chicken juices run clear.

Nutritional Analysis: One serving (prepared with evaporated skim milk and margarine and without salt) equals 288 calories, 410 mg sodium, 78 mg cholesterol, 14 gm carbohydrate, 32 gm protein, 11 gm fat. Diabetic Exchanges: 4 lean meat, 1 starch.

This was SO good!! I added a couple of things to make it even better! To the chicken mix I added some Italian seasoned bread crumbs, onion powder, garlic powder, and garlic pepper (all to taste). Then in the rice I added a can of cream of chicken, a can of green beans, and some onion powder, garlic powder and garlic pepper to taste. And about 3/4 c. milk. Very Yummy!!!

The chicken was delicious and moist. I used chicken broth instead of water for the rice. It needed a bit more flavor. I'd add a little more seasoning next time. Quick and tasty though.

This is an amazing recipe. I sorta adlibed a little bit. I added chopped spinach to the rice. Substituted Italian dressing for evaporated milk. At the very end I put marianra sauce on the chicken then added slices of provolone.

We didn't care for this at all. My breading was soggy and I had to pick it off of the chicken before eating it. The rice was just ok. It was kinda mushy.

I should have read the reviews before I made this. I found the rice was on the bland side. The melted butter helped bring some flavor and color to the chicken. However, if I try this again, I think I will use chicken stock instead of water like some of the other reviewers have.

I would describe this dish as unmemorable. It tasted fine, but was definitely not amazing or worthy of a five star rating. Kind of "eh," really.

The breading and spices were good but otherwise i agree with a few others, very dry and the rice didn't have alot of flavor. Not worth keeping around.

My 2 year olds ask for chicken and rice every night so we are always on the look out for new recipes. This one passed the test. The chicken is very juicy and has a great taste. I did as others have done and added a bit more italian seasoning and sprinkled with garlic powder. The rice is a bit dry....even after adding double the liquid (I used chicken broth). Maybe it needs to be covered for a portion of time. If you are looking for more of a sauce, I would suggest cream of chicken soup. Overall, I rated this 4 stars because we will def. make it again (the chicken alone is worth it).
