Yum, great flavors! The chicken was overcooked though. I knew the cooking time was too long but I wanted to brown it first, so I removed it until I added the other ingredients, but it was still way too long. There really wasn't a reason to brown it first anyway because it takes on the color of the wine. Next time I'll add the chicken when the pasta is almost done (I cut it into strips instead of cubes). I used Merlot wine and a combination of cheddar and Parmesan cheese. Really tasty and easy, thanks for sharing!
