Irish-Style Lamb Stew

INGREDIENTS

  • 1 pound cubed lamb meat
  • 1 large onion, halved and sliced
  • 1 pound baking potatoes, peeled and sliced
  • 1 carrot, peeled and sliced
  • 1 large stalk celery, sliced
  • 2 tablespoons chopped fresh parsley
  • salt and pepper to taste
  • 2 cups beef stock
  • 1 tablespoon chopped fresh parsley, for garnish

DIRECTIONS

  1. Preheat the oven to 325 degrees F (165 degrees C).
  2. Layer the lamb meat, onion, potatoes, carrot and celery in an oven proof pot or casserole dish. Season each layer with parsley, salt and pepper as you go. Pour in the beef stock and cover tightly.
  3. Bake for 1 1/2 to 2 hours in the preheated oven, until vegetables and meat are very tender. Divide into bowls and garnish with additional parsley.

With a few simple changes, my Irish husband loves this! I cook it in a crockpot on the low setting for 8 hours, so reduce the amount of beef broth to 1 cup; omit the celery, which we don't like, and add extra carrots, which we do; omit the parsley from the stew and use it only as a garnish; and stir in frozen peas (no need to thaw) about 15 minutes before serving. I also cut the potatoes into nice size chunks instead of slicing them (they are enough to thicken the stew without adding the usual flour/cold water paste). This really is a meal you can eat with a fork, unlike some of the soupy stews that require spoons, and that's just the way we like it! Irish soda bread or homemade biscuits complete this hearty meal.

This got 5 stars from my whole family. We loved it! I used 2 lbs. lamb, 2 lbs. red potatoes, about 7 multicolored organic carrots, 2 c. beef broth, the parsley, salt and black pepper. Eight hours on low in the slow cooker, and I served it with the Light Wheat Rolls from this website that I had frozen from last weekend. My husband requested that I put four m's in the "Yummmmy!!"

It was a little bland. I added more salt after it was finished. I made this with the Irresistible Irish Soda Bread from this site.
