Really good base recipe, but had to make a few alterations. The most important alteration was timing!!! This does NOT take a mere 2.5 hours, people --- you need to clear your calendar for about 3.5-4 hours to make this properly!!! The main problem is the potatoes. Perhaps if you added them earlier it might be ready in 1/2 hour, but you really need a good hour or so (over low heat, obviously). Also, the dumplings took much longer than the 20 mins as suggested by the author - it was more like 40 mins. That being said, the recipe itself was fantastic, and I only added some celery seed and more salt to it. Also, I made chicken pot pie with the leftovers!!! It turned out delicious as well. Just unroll a pie crust into a pie plate, add leftovers, seal the top, cut slits (so heat can escape), brush with egg wash and pop in a 375 oven for about 40 mins. Excellent the day of and several days later. This is definitely a keeper!!!

This is a fantastic recipe! My husband is a huge fan of chicken & dumpling was a bit of a skeptic when he saw the potatoes & peas going into the pot. Boy was he surprised when he tasted this dish; as was I. This is going to be part of my winter recipes for sure!

This turned out delicious! I used bone-in breasts (to add some more flavor) and had to add some chicken broth as it was a little too thick when going to drop the dumplings in. I had doubts about "baking mix" for dumplings, but they actually weren't bad due to soaking up the flavorful broth. This is a keeper!

Delicious! My first time making chicken & dumplings. I omitted the potatoes (didn't have any), used herbs de provence instead of poultry seasoning, and used thigh meat instead of breasts. The end product was absolutely perfect. Silky/velvety soup, carrots cooked perfectly, dumplings light and airy, and most importantly moist chicken. Husband said it was the best chicken and dumplings he has ever had. Definitely will make again.

This was a very solid recipe. We thought it was very good, and since we like dumplings we enjoyed how many there were. It does make a lot of everything so you can have leftovers.

I kinda feel bad rating this cause I changed it so much. I added an extra can of cream of chicken soup and a can of cream of celery. I also left out the potatoes. I used a different dumpling recipe (the one from Chicken and Dumplings III) cause I didn't have any baking mix on hand. That said, this was very good and I will definately make it again. The whole family loved it. Thanks for sharing, and sorry I had to change it up so much!

I have had this recipe for years and it is one of my most requested. I add 3 cans of cream of chicken soup/with herbs in it and it is FANTASTIC! I do add a few additional spices but it is just a matter of taste. If you have not tried this one, once you do, you will be hooked!

This recipe turned my husband into a Chicken and Dumpling lover. I've made this many a time and my favorite way to make it is with a pound of baby carrots, 3 (diced)potatoes, minced garlic and home made dumplings. Thank you CLAIRELLEN!

I made a few changes to this recipe so that it is hard to rate. The result was absolutely delicious. I started out with a 4 pound cut up chicken. I covered it with about 3 cups homemade chicken broth and water. I also added about 1/2 tsp ground allspice. I used a 2 cups Bisquick with 1/2 cup milk. Otherwise, I followed the rest of the recipe; however, like another reviewer, I cut up the potatoes into small cubes.

This recipe was absolutly fantastic. My whole family enjoyed it. The only problem I had was that I had no idea what this baking mix was so I used another recipe to make the dumplings.

Comfort food at its best - almost as good as my mom's. I followed the recipe *almost* exactly. I didn't have any poultry seasoning, so I sub'd in savory and thyme. I also didn't have any cream of chicken soup, so I used 1 can of cream of potato and one can of cream of celery; I also didn't use frozen peas, but canned instead. The only other change I made was to make my own 'baking mix' by combining 1 cup of flour, 1 1/2 tsp of baking powder, 1/2 tsp salt and 1 Tbsp of shortening (cut in with a pastry blender). I tripled this and used about 1 1/2 cups of milk - the end result was light, fluffy dumplings.

I was expecting more from this recipe based on all the reviews. My husband and I both thought this tasted like the Chicken Pot Pie IX recipe on this website but without the crust (dumpling topping instead) and not as good. There was a lot of dumpling mixture and it just all cooked together on top. I don't think we'll be making this again. If you do like this recipe though, you will love the pot pie recipe.

I threw it all into a slow-cooker and cooked on high for 4 hours. It was very good, but I made the dumplings separately on the stove. Next time I won't add as many vegetables- mainly potatoes, because they kind of overtake the dish. Then again, it probably wouldn't be "Irish Chicken and Dumplings" without all the potatoes.
