Irish Bacon And Cabbage Soup

"This is a wonderfully simple chunky soup. I use good quality Irish back bacon but if you can't get this, it tastes equally good made with pancetta. The dark green colour of the cabbage alongside the tomatoes gives the soup a beautiful colour."

1/2 pound Irish bacon, diced
2 large potatoes, peeled and cubed
1 (15 ounce) can diced tomatoes with juice
1 cup chicken stock, or as needed
Salt and black pepper to taste
2 cups thinly sliced dark green Savoy cabbage leaves

DIRECTIONS
Place bacon in a large, deep stockpot or saucepan. Cook over medium high heat until evenly brown. Drain off any excess fat.
Stir in potatoes, tomatoes, and enough chicken stock to cover. Season with salt and pepper. Bring to a boil, reduce heat and let simmer for 20 minutes, or until potatoes are tender.
Stir in cabbage and allow the soup to simmer for a few minutes longer before serving.

I couldn't find Irish bacon and used Pancetta for the first time which made the flavor of this soup fantastic. It's a true comfort meal especially when serving the recipe for Irresistible Irish Soda Bread. Thank you for sharing which brought raves from my guests!

My husband and I thought this recipe was very good. I just used ordinary bacon and added a touch of basil and a little sugar. Most things with tomatoes needs a touch of sugar to get rid of the flat taste. Will make again.

I THOUGHT THIS WAS ONE OF THE BEST SOUPS I'VE HAD I COULDN'T FIND IRISH BACON SO I USED KILBASA AND IT WORKED OUT JUST FINE. THANK YOU

We loved this soup. Used regular bacon and cabbage since that's what I had leftover. One change is that it takes a bit more chicken broth and/or water.

my sister made this soup last year on st. patrick's day. We absolutely loved it. We used regular bacon and cabbage, and more herbs. Im going to make this recipe tonight. It is wonderful

I tried this recipe over the weekend and it was amazing, even my picky 2 yr. old ate it, and went back for more. this is by far the greatest soup i have ever had.

I was kinda worried about this because it really didn't taste that great the first time around, but when we heated it up the next day it was GREAT. I added chicken for extra protein and used regular cabbage. Also added some minced garlic. Potatoes were yukon golds, but I think red taters might taste better next time.
