Insalata Caprese I

"This tastes like the salad that is served at a famous Italian restaurant chain in my area. It's perfect with fresh loaf of crusty bread. For the best flavor be sure to use fresh whole-milk mozzarella it puts the packaged varieties to shame. You can find fresh mozzarella in Italian delis, gourmet markets, cheese shops and some grocery stores."

INGREDIENTS

  • 4 ripe tomatoes, cut into wedges
  • 14 ounces fresh mozzarella cheese, diced
  • 1 red onion, sliced
  • 1/3 cup extra virgin olive oil
  • 1/3 cup balsamic vinegar
  • 1/4 cup chopped fresh basil
  • salt and pepper to taste

DIRECTIONS

  1. In a large bowl, combine the tomatoes, cheese, onion, oil, vinegar, basil, and salt and pepper to taste. Toss and chill for 1 hour. Serve on large platter.

N.J. is known for growing the tastiest tomatoes in the country and we all know never to refrigerate these red beauties, as they will lose their flavor. After combining the ingredients, including garlic, I just let the mixture sit on my counter to absorb all the wonderful flavors. Ten minutes before serving I added the cheese. Thanks so much Kathy for a great side!!!!

This was a great salad. I messed up and got shredded mozzarella without thinking, but it still turned out great! Rave reviews all around!

I wanted add a new italian salad for italian night dinner. My husband and 17 year old daughter loved it. It was so flavorful and zesty. They ended mixing leftovers with lettuce berg. Thanks, it was a hit! Raquel Altavilla
