I have to confess to not being much of a cook, buy my daughter and I, who is 7, made a pact to cook meals from various locations around the world. We decided our first would be an Indonesian meal of sorts. I probably just got lucky but this was restuarant style chicken, some of the best I have ever had. I will definitely be adding this recipe to my personal fav list.
Just to note I marinated overnight and through most of the next day until cooking time, about 20 hours in all, and everything turned out just fine. The marinade is simply a fantastic taste, flavor, and consistency.
The only aspect of the recipe I might try to improve on next time around is the dipping sauce. It wasnt that it was awful, in fact it was pretty good and went quite well with the chicken, but I might play around with a few more spices and flavorings and definitely cut down on the amount of peanut butter used--maybe 1/4 cup next time.
I would recommend this recipe to anyone, or to impress relatives or friends coming in for the weekend. Two big thumbs up. Indonesian rice compliments this quite well.
Final note--probably a piece of chicken, or two skewers of chicken per person would be a good estimate. I had three pieces of chicken breast cut in long halves to make 6 and it didnt quite feed 3 adults and 2 children.
