8 bacon strips
1 cup ketchup, chili pepper ketchup or salsa
8 eggs
salt and pepper to taste
Chopped fresh parsley

DIRECTIONS
Partially cook bacon in microwave or oven until about halfway done (do not overcook); drain. Spray eight 10-oz. custard cups with nonstick cooking spray. Line each cup with one bacon strip. Spoon 2 tablespoons ketchup or salsa on top of bacon. Break one egg into each cup; season with salt and pepper. Place cups on a baking sheet. Bake, uncovered, at 375 degrees F for 18-20 minutes or until eggs reach desired doneness. Let stand 2 minutes. Run a knife around edge of cups; slip eggs out of cups onto a serving platter. Spoon sauce from the custard cups over eggs. Garnish with parsley if desired.

There were a few raised eyebrows when I decided to use this recipe for Christmas breakfast, but it was a hit! Everybody thought it was excellent. I made these individual egg bakes in muffin tins. I tore each strip of bacon in half and criss-crossed it in the muffin pan, put in some salsa, then cracked an egg on top. I broke the yolks of some of the eggs and didn't break some. Both turned out great, it is simply a matter of whether you'd like a "yolk" like a hard boiled egg, or more like scrambled eggs. As people took bites of these egg bakes, they all said, "wow!" It really is a simple and good recipe.

This was huge hit for our Father's Day Brunch. I added a bit of mexican cheese on top of the salsa to jaz it up a bit, but everyone was asking for the recipe... I recommend it!!

These weren't that big of a hit with my family. I think that they would be easier to eat if the bacon was cut into bite size pieces before putting in the cup. I used salsa. They were just "okay". Thanks anyway, it was fun to try it.

This is a great recipe! I alter it everytime I make it. Really yummy with Heinz 57 instead of ketchup. :)
