Impromptu Mac and Cheese

"Quick and easy macaroni and cheese. Add sausage or hot dogs as desired or salsa and taco meat for mac and cheese with a kick. I used pre-cooked chicken and cheese sausages, and my 2 year old didn't want to share!"

Ingredients

  • 1 cup uncooked macaroni
  • 1 link of precooked chicken and cheese sausage
  • 1 tablespoon milk
  • 1 teaspoon butter
  • 1 tablespoon grated Parmesan cheese
  • 1/4 cup shredded mozzarella cheese

Directions

  1. Fill a pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the macaroni, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 8 minutes. Drain well in a colander set in the sink.
  2. Slice up the sausage, place on a microwave-safe plate, and heat the sausage just until hot, about 30 seconds. Mix the sausage slices into the hot macaroni, and stir in the milk, butter, Parmesan cheese, and mozzarella cheese. Stir until the cheese is melted, and serve.

I didn't have mozza cheese so I used old cheddar - I also omitted the meat because I had none...
