Impressed Myself Chicken

INGREDIENTS

  • 1 pound sliced bacon
  • 1 (8 ounce) package dry bread stuffing mix
  • 6 skinless, boneless chicken breast halves - pounded to 1/2 inch thickness
  • ground black pepper to taste
  • garlic powder to taste

DIRECTIONS

  1. Preheat the oven to 375 degrees F (190 degrees C). Cook bacon in the microwave, or in a large skillet until about halfway done. Set aside.
  2. Prepare the stuffing mix according to package directions. Do not bake. Place the bacon on a clean flat surface. Arrange sets of three slices with two going across, and one up and down.
  3. Place a piece of chicken on top. Separate the stuffing into 6 portions, and shape each one into a log. Place one in the center of each piece of chicken. Pull chicken around the stuffing to cover, bringing the bacon around with it. Secure with string or toothpicks. Season with pepper and garlic powder. Place the chicken bundles in a roasting pan, and cover loosely with aluminum foil.
  4. Bake for 30 minutes in the preheated oven. Remove the foil, and cook until bacon is crisp and chicken is no longer pink, about 10 more minutes. Serve as is or with gravy.

This was just ok for us. The chicken didn't have as much flavor as I would have liked. I also was afraid of it drying out, so I added a little chicken stock in the pan while baking. It helped keep it moist, but I think I would like to tinker with the spices. Thanks for the post.

What an easy recipe for a work night! My family really liked this and they were all impressed! I would suggest cooking the bacon in the microwave for only about 2 mins. so it doesn't get too crispy which will make it easier to work with. It cooks up well in the oven. Good taste. Thanks!

HOLY SALTY!!! This dish was tasty, but very salty. I followed the recipe, and it just wasn't what I was looking for. It was good, if you like chicken and stuffing. It was easy to make and bake, but was just off somehow. I haven't made it since, and I'm not sure I would again. I was a great concept, but not my cup of tea. Perhaps you will enjoy it.
