Pumpkin Custard Pie I

The proportions are perfect in this old Amish recipe with just the right amount of sugar, eggs and spices mixed into the pumpkin puree and milk. The thick and creamy filling bakes up deliciously after an hour in the oven. Serve with whipped cream and a sprinkling of candied ginger.

For this delicious version of the classic, milk is stirred into the pumpkin puree, so that it 's a bit lighter than others. And if you want to make it with low-fat milk, that would work, too. This recipe makes enough filling for two 9-inch pies.

There 's a lot of brown sugar in this version of pumpkin pie. There are also lots of eggs in it, so the filling is rich and sweet and bakes lovely. This recipe is generous enough to make two pies.
