Iced-Spiced Ginger Bars

INGREDIENTS (Nutrition)

  • 2 cups all-purpose flour
  • 1 cup white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1/8 teaspoon salt
  • 1 cup hot, brewed coffee
  • 1 cup butter
  • 1/2 cup molasses
  • 2 eggs
  • 1/3 cup butter
  • 3 cups confectioners' sugar
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons water

DIRECTIONS

  1. Preheat oven to 350 degrees F (180 degrees C). Grease a 15 x 10 or 13 x 9 inch pan.
  2. In a large bowl, combine flour, white sugar, baking soda, cinnamon, ginger, cloves, salt, coffee, 1 cup butter or margarine, molasses, and eggs. Beat 2 minutes at medium speed. Pour into prepared pan.
  3. Bake for 25-30 minutes. Let cool.
  4. To Make Frosting: In a small saucepan over low heat, cook 1/3 cup butter or margarine until light golden brown, stirring constantly. Add confectioner's sugar, vanilla and water. Blend until smooth (may need to add more water). Spread over cooled bars.
