This is a wonderful pumpkin cookie, very tasty with the icing, although next time I will add a pinch more of each of the spices.

Wow! These are fantastic! Thanks for sharing these delicious seasonal cookies. I added some chocolate and cinnamon chips and used mostly whole wheat flour. I also substituted 1/2 light brown sugar for 1/2 cup white sugar. So tasty I didn't bother with the frosting.

I will try this one again, using it step by step. I doubled the recipe, used 1/2 brown & white sugars, and added about 1/4 cup more pumpkin, because that was the rest of it. (Silly to see it go to waste). I DIDN'T have problems with the cookies flattening out, because of the add'l pumpkin. ALSO, Pampered Chef Stoneware and a #50 Cookie Scoop gave me just the right mount of cookies. I baked them for the full 20 minutes. I also added mini chocolate chips to half the dough. As I stated earlier, I'll try these again and see if I get a fluffier texture, like I was expecting. I had these types of cookies before, but maybe it was my modifications that made them different from what I was looking for.

I made these with 1/2 cup white sugar and 1/2 cup brown sugar, 2 tsp cinnamon and 1/2 tsp pumpkin pie spice, and about 1 1/2 cups of pumpkin puree, and they turned out amazing! They are very cake-like and moist, my favorite kind of cookie. I also added 1 oz of cream cheese to the frosting.

WOW!!! These cookies are absolutely DELICIOUS and very easy to make! They're soft, moist, and full of wonderful spices! Your whole kitchen will have a pleasant aroma to make it really feel like the fall season. One of my dearest friends (Gail) is coming to visit tomorrow so I wanted to have a special treat for her, and this recipe did the job! I just recently started baking as a hobby (so I'm no expert) and if I can make these cookies, then anybody can! Here's what I did to alter the original recipe: (1) I added 1/2 teaspoon of pumpkin pie spice, and I combined 3/4 cup brown sugar with 3/4 cup white sugar (instead of 1 1/2 cups of white sugar); (2) I also added some pumpkin pie spice to the glaze; (3) I didn't flatten my cookies because I like the more rounded shape at the top of the cookie; (4) I baked them for 14 minutes (instead of 15-20 minutes) which made them taste more moist. I was so excited about these cookies that I took pictures of them with some pumpkins in the background! I will definitely make these cookies again very soon because the batch I baked today will be gone by this weekend! Thank you to Gina (also my sister's name), who submitted this popular recipe! My mom (Lety), who doesn't even like pumpkin, enjoyed these cookies. My husband (Trevor) can't wait to come home from work to try them! Oh, one more thing...they're AWESOME right out of the oven! Eat them while they're warm with a cold glass of milk! This is definitely a comfort food!!!

Delicious! I added about 1/4 cup of mini chocolate chips to the batter and a sprinkle of cinnamon and brown sugar to the glaze. My husband liked them plain, but I loved them with the glaze. YUM!

These cookies are amazing!! I had another pumpkin cookie recipe (a family recipe) that I had always made. But, now I'm starting a new family recipe and it's this one!!! The cookies bake up so fluffy, soft and moist. And the icing complements them wonderfully! I did use the 1 1/2 tsps. of cinnamon and 1 1/2 tsps. of pumpkin pie spice because that's what I had and it worked out great! Other than that, I used the original recipe.

Awesome! My house smelled like fall while these were baking, I did as some other suggested and used half brown sugar and half white... yummy! I also added pumpkin pie spice to the glaze and that rated the cookies over the moon!!!!

A great pumpkin cookie. I used one can (15 oz) of pure pumpkin, and doubled all of the spices. This was great! Slather it with some cream cheese frosting, and this turns into my favorite cookie.
