These were a really delicious treat for the summer time and are helpful because of the simple steps that take not long to complete.

I love making these and my toddler loves them too. You don't have to add the chips, we usually just eat them plain. I have been experimenting with different variaties--chocolate pudding on honey grahams and then a cheesecake pudding on chocolate grahams. I also only use 1 3/4 c of milk when making the pudding to make it a tad bit firmer.

Is added 8oz cream cheese and about 1 cup confectioners suger. I also used homemade chocolate chip cookies instead of graham crackers, they were AWESOME!

These certainly are quick and easy, but personally I perfer ice cream sandwiches better. There's something about the classic treat that you can't replace. Still, my kids fell in love with these at first bite, and my husband went pretty crazy over them too. Also, I think these might be better with chocolate pudding and a butterscotch sauce garnish to give them a little more flavor. I would say these treats are a superb substitute for ice cream sandwiches, but you shouldn't think these are going to taste the same, because then, you might be a little disapointed!
