Ice Cream Tunnel Cake
SUBMITTED BY:
Holly Jean VeDepo
"My son found this yummy recipe a few years ago and now it's a Yuletide tradition. A boxed mix makes preparation easy. For a fun variation, try mint-chocolate chip ice cream."

DIRECTIONS
Prepare cake mix according to package directions. Pour batter into a greased and floured 10-in. fluted tube pan. Bake at 350 degrees F for 35-40 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. Cool completely.
Slice top fourth off cake; set aside. Using a sharp knife, carefully hollow out bottom, leaving a 1-in. shell (save removed cake for another use). Place cake shell in freezer for 1 hour. Fill tunnel with ice cream; replace cake top. Cover and freeze for at least 6 hours.
Just before serving, melt chips and corn syrup in a microwave; stir until smooth. Stir in cream and vanilla. Spoon over cake.
FOOTNOTES
If mint chocolate chips are not available, place 2 cups (12 ounces) semisweet chocolate chips and 1/4 teaspoon peppermint extract in a plastic bag; seal and toss to coat. Allow chips to stand for 24-48 hours.
*Editor's Note: If mint chocolate chops are not available, place 1/2 cup semisweet chocolate chips and a few drops of peppermint extract in a plastic bag; seal and toss to coat. Let stand for 24-48 hours before using.

I made this cake with mint chip ice cream for my son's birthday. I used regular (not mint) chips for the frosting. It was delicious and surprisingly easy to make. Also, I iced the cake in advance and put it back in the freezer with the frosting on. It turned out great and I did not have to do any last minute preparations during the birthday party.

I made this for the 4th of July with the mint chocolate chip ice cream and everybody loved it. I thought it needed a little more ice cream so I filled the center of the cake with more ice cream and then drizzled the top with hot fudge. It was a huge hit.

Actually...I haven't tasted it yet b/c the birthday is 2 weeks away; however, I tried this variation and think it will be delish! Choc. Fudge Cake Mix, add tsp. cherry extract to mix, Black Cherry Ice Cream center, add chopped cherry pieces to top the cho.chip icing. Chocolate and cherry - always a winner!

Great Recipe! My son made this for Father's Day and forgot to grease the pan. No problem though... Just turned the cake upside down, cut the bottom quarter off and followed the instructions as if it was right side up. Took the remaining pieces that stuck to pan and froze them also. After filling the ring with ice cream, we covered the "top" with the leftover pieces, cubed. My son then put some whipped cream dollops on the top and drizzeled some chocolate syrup over that. My husband said it was the best cake he ever had... Fun, easy and a great memory. Thanks!
