1 cup vanilla ice cream, softened
1 tablespoon creamy peanut butter
1/4 teaspoon vanilla extract
4 graham cracker squares

DIRECTIONS
In a bowl, combine the ice cream , peanut butter and vanilla until well mixed. Spread over 2 graham cracker squares. Top with remaining squares. Wrap and freeze until solid, about 1 hour.

Nutritional Analysis: One sandwich (prepared with reduced-fat frozen yogurt, reduced-fat peanut butter and reduced-fat graham crackers) equals 201 calories, 5 g fat (1 g saturated fat), 10 mg cholesterol, 214 mg sodium, 33 g carbohydrate, 1 g fiber, 7 g protein. Diabetic Exchanges: 2 starch, 1 fat.

everyone in my family loves it! dont bother with the vanilla extract, it tastes great without it. i didn't pay any attention to the amount of ice cream and peanut butter, i just did it to taste. i also added a few chopped pecans and walnuts. stir quickly, or else it will melt. after all, it *is* ice cream!

I love these!! My mom use to just make them with vanilla or choc. ice cream. she would take the sides of the 1/2 gallon container and slice it with a knife into squares, then place in between two cinnamon sugar graham crackers, then wrap in tin foil. we would fill up the freezer at the begining of summer. What a great flashback. I will try the recipe your way, and share with my mom. Thanks.
