Hot Turkey Salad

"Need a quick and easy dinner idea for leftover turkey? This is my grandmother's recipe, one she made the Monday following Thanksgiving. I'm so glad I found the recipe. It's quick and easy, not to mention delicious!"

Ingredients

  • 2 cups cubed cooked turkey
  • 2 cups chopped celery
  • 2 teaspoons grated onion
  • 1/2 cup pecans, chopped
  • 1/2 teaspoon salt
  • 1 cup mayonnaise
  • 2 tablespoons fresh lemon juice
  • 1/2 cup Cheddar cheese, grated
  • 1 cup potato chips, crushed

Directions

  1. Preheat oven to 450 degrees F (230 degrees C). Grease a 9x13 inch baking dish.
  2. Mix the turkey, celery, onion, pecans, and salt together in a mixing bowl. Stir in the mayonnaise and lemon juice until evenly blended. Spoon into the prepared baking dish. Sprinkle with Cheddar cheese, then potato chips.
  3. Bake in preheated oven until cheese melts, 10 to 12 minutes.
