I made mine in a panini press, it didn't end up very crispy and sandwich like, more stuffed french toast like. It tasted pretty good, not sure that the coconut added much, but then coconut isn't my favorite flavor.

HUGE hit with the family. I didn't have raisin bread, I had regular Sara Lee whole wheat bread. I grilled them in my greased cast iron skillet which I think made them even awesomer, if that's even a word. My eldest boy ate two and asked for a third!

We just had these for breakfast a couple of minutes ago and they got a 5 star response from my family. So warm and yummy. I had to use grape jelly, but next time I will use apricot. Thanks for the recipe!! This one will be used alot in our household!!!!

This is so easy and makes a nice presentation. I certainly could see serving this for brunch for family or friends, maybe cutting into quarters. I sprayed the outside of the bread with ICBINB, and it browned up nicely. What makes this special IMO is using the raisin cinnamon bread. Followed the recipe exactly and garnished with a little bit of toasted coconut. Thanks Gloria for a yummy Sunday breakfast.

Delicious! I didn't make a sandwich, but rather used this as a spread on toasted cinnamon raisin bagels. Like another reviewer I tried it with both Land O Lakes lite butter and reduced fat cream cheese - both were really good!

Before trying this recipe, I thought that mixing apricot jam with cinnamon would be very weird. But it's absolutely delish!

made this twice, second time used cream cheese instead of butter, delicious both ways! Not as overly sweet as you would think from reading the recipe. My kids loved it as a snack after gymnastics.

I really enjoyed this recipe. Quick to make, and great taste. You don't need to put alot of the jam mixture on the bread. It is best with Raisin bread, but, I'm sure it would be good with white or wheat. Try it--you'll like it.
