I have had german potato salad from the deli at my local grocery store and didn't enjoy it very much. I however can't get enough of this potato salad. I never thought I'd see the day when a sauce was made with bacon grease. And there is just the right amount of vinegar to give it a slight tang, instead of the salad tasting like vinegar. I love this recipe and will use it many times in the future.

Excellent german potato recipe!!! I have made them twice now for big crowds and they were a hit each time. Loved the vinegar taste.

Tricia, thank you for sharing this recipe, I thought it was perfect as written. I did use russets and would use yukons next time as they hold together better. You have a great recipe and now so do I. Jeneen

I let another reviewer talk me into using less potatoes and I shouldn't have. The flavor was good and tart. Stick to the original amounts the recipe calls for and if you don't like hot potato salad or you don't like vinegar then DON'T make it anyways and then complain. Geez I hate when people do that!!! This was very good and I will make again!

This is really a very good recipe. As written, 4 stars, but made with only 7 potatoes instead of 9, I would give it 5 stars (with more potatoes I don't think there's quite enough "sauce" because it soaks in over time). I've made it many times, tinkering with the vinegar amounts, the onions, bacon, etc.....but I just made it again as written (but with 7 potatoes) and it's perfect. Try it!

This is pretty good. My husband was impressed and said he could eat this every night. I only give it four stars, because I think it needs a little more of the water/vinegar mixture.

This is the best German Potato salad that I have ever had! I am so happy that I made this recipe out of all of the others. I did add more bacon and was happy with the extra drippings. Thank you so much! It was relatively very easy and delicious.

I am a personal chef and recently got a request for hot german potato salad. Not having a really good recipe, I went on the search. Tried this one and got wonderful feedback at the baby shower I catered. I didn't change much with the exception of using a white wine vinegar to impart a deeper and richer vinegar flavor. Thanks!

OMG... I'm so grateful I'm Irish and German! Made this to go with our St. Patty's corned beef (makin rubens, maybe I'm a lil Kosher too, lol). This so reminds me of dinners with my grandparents, Nanny and Pop-Pop. It doesn't get any better then this. I too followed the recipe exactly, turned out delish! TY so much... 'Erin go bragh'

This was gooooood! I've made it 3 times. I haven't changed anything from the original recipe, except I tried the second with apple cider vinegar. Stick with the white vinegar, as it adds a lot more flavor to the dish. Don't overcook your bacon unless you like the charred flavor. Almost as good as the local German restaurant.

Flavor was good, but need to make like twice the sauce for it to be wet enough -- way too dry otherwise. I had to go back and remake another batch of sauce for the potatoes to be covered.

This was so good. I did like other reviewers did and used 8 red potatoes, the small to medium size. It was the perfect amount. I also didn't have any celery seed so I didn't use that . I will be making this dish on a regular basis!

I agree with an earlier reviewer -- the potatoes fell apart, maybe will use red potatoes next time. The flavor was fantastic! I tried to scale down the recipe and I found it to be a bit dry, but I just added more vinegar and water later on and thinned out the sauce and it was still amazing!!!! Very pleased. Thanks!

This was tasty, and not too hard to make, either. Just make sure you don't overcook your potatoes. I used cider vinegar. We had this with German bratwursts, Kaiser rolls, and broccoli.

I guess I've never had "real German" potato salad! This was SO good!! It was definately different than anything I've tried, but I loved it!! I did add about 1/4c of sour cream for the creaminess. That probably changed it completely. However, we loved it! We'll definitely make it again!

Perfection! I used 5 potatoes instead of 9, but kept the sauce recipe as is. I know the recipe is good, but I'm going to substitute olive oil for bacon drippings... to make it heart healthy.
