Hot German Potato Salad I

My Grandparents used to make this for us when we were children. The addition of escarole adds a great flavor to the bacon, potatoes and eggs.

In Delano, Minnesota, Marlene Muckenhirn makes these zesty salad with potatoes, celery and onion. It's a terrific side dish when served warm with crumbled bacon and fresh parsley sprinkled on top.

What makes this traditional potato salad so good is that the dressing is poured onto the potatoes while they are still warm. Then the whole wonderful concoction sits for an hour to blend all the flavors perfectly. Makes six generous servings.

This is a really good hot potato salad that my mother used to make for us. You can vary the amount of vinegar and sugar to change the taste around.

This salad begins with red potatoes, which is a very good sign, and ends being tossed in a really nice dressing spiked with lemon juice. A pleasant taste change from the same old, same old potato salad.
