Ingredients

  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 2 tablespoons vegetable oil
  • 1 cup uncooked long grain rice
  • 1 1/2 cups water, divided
  • 5 hot dogs, cut into pieces
  • 1 (14.5 ounce) can stewed tomatoes, undrained
  • 3 tablespoons ketchup

Directions

  1. In a large skillet, saute onion and green pepper in oil until tender. Add rice; cook and stir for 2-3 minutes. Add 1-1/4 cups water and hot dogs. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes. Add the tomatoes, ketchup and remaining water. Cover and cook until rice is tender.
