Hot Bacon Asparagus Salad

INGREDIENTS

  • 7 bacon strips, diced
  • 1 pound fresh asparagus, trimmed
  • 1/3 cup vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon ground mustard
  • 1/4 teaspoon pepper
  • 4 cups torn salad greens
  • 1/2 cup sliced almonds
  • 2 hard-cooked eggs, sliced

DIRECTIONS

  1. In a skillet, cook bacon until crisp; remove with a slotted spoon to paper towel. Drain, reserving 2-3 tablespoons drippings.
  2. Cut asparagus into 1-1/2-in. pieces; saute in drippings until crisp-tender. Add vinegar, sugar, mustard, pepper and bacon. Cook and stir for 1-2 minutes.
  3. In a large bowl, combine the salad greens and almonds. Add the asparagus mixture and toss gently. Top with eggs. Serve immediately.

I made this last night at a dinner party and it was a hit -- my only recommendations are that there should be more bacon, and more eggs. I also threw in citrus marinated chicken strips to add some substance to the meal. Everyone loved it! I will make it again!

I changed the greens to Romaine and spinach. They hold up to the hot dressing. I used cider vinegar and dijon mustard. I did not use the almonds . I found this to be quick and easy . I don't think it was a meal on its own for 6 people . Anna H.

This sounded great, but I was less than impressed. You have to be ready to eat it the minute it is done because it doesn't hold up. Needless to say that if you don't eat it all right then it's wasted because it doesn't keep, and having leftovers are the best part. I ended up throwing a lot of food out.
