2 tablespoons sugar
2 tablespoons cider vinegar
1 tablespoon prepared horseradish
1 1/2 pounds beets, cooked and julienned
Lettuce Leaves
Add to Recipe Box

DIRECTIONS
In a bowl, combine sugar, vinegar and horseradish. Add beets and toss to coat. Cover and chill for 6 hours or overnight. Serve on lettuce.

Made it last noight , tried it today after letting it marinate for the required time , must say not a fan, was expecting something different. However keep in mind I am not a beet lover and overall the beet taste is not masked enough. I think I will stick to my beet soup.

I served this on top of a Mediteranean salad mix, with Hopkins Inn dressing, and it was great! Served it to guests, who ate it all.
