1 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/2 cup honey
1/2 cup milk
1/4 cup vegetable oil
1 teaspoon grated lemon peel

DIRECTIONS
In a large bowl, combine flours, baking powder and salt. In another bowl, beat egg, honey, milk, oil and lemon peel; stir into the dry ingredients just until moistened. Fill greased muffin cups three-fourths full. Bake at 375 degrees F for 18-20 minutes or until muffins test done. Cool in pan for 10 minutes before removing to a wire rack.

A great recipe, but I changed it to suit my tastes a bit: I applesauce instead of oil (same 1/4 cup), 50% whole wheat flour & 50% regular flour, 1/2 banana (mashed) instead of egg, and added a bit more baking powder, and finely chopped a little more lemon zest - gave it good flavor. only prob is it's a little too moist--tinker with it, but otherwise YUMMY AND FAT-FREE!!!!

I made these to serve with some seriously spicy chili to help cool my daughter's tongue. I substituted 1/8 cup of the oil for unsweetened applesauce, added 1 tbsp more honey, 1/2 teaspoon of vanilla extract and used 1 teaspoon of grated orange peel instead of lemon. They did the trick and were absolutely delicious! Very hearty. I think these would be good with chopped walnuts in them too - think I'll try that next time. Great recipe!

Great recipe. I added frozen blueberries, and made with all white flour because I did not have any whole wheat flour on hand. I will definitely make again.
