The first time I tried to make these, they didn't rise at all! But that was probably due to the water being too hot & killing the yeast. So I tried it again, using an extra baby thermometer to check the water (it was around 105 degrees), and the dough rose like a champ! Actually, I think I could have even cut the 2nd rise by 10 minutes from 45 to 35, since the tops of the dough seemed to be overflowing from the edges of my loaf pans.
Overall, a very easy recipe to follow with common ingredients. Just watch your water temp. Only reason I can't give it 5 stars is because of the very minor modifications I made: 1) I waited 10 minutes before adding the honey to the yeast & water. 2) I did the 1st rise in a closed oven with a pan of just-boiled water on the bottom rack. I left the pan in the oven to use for the 2nd rise.
Otherwise, the taste and texture of the bread was lovely. The sweetness was noticeable, but still subtle. It's great when lightly toasted with some butter!
