For some reason I have missed the honey in the recipe. But it is delicious anyway, we don't like overly sweet biscuits anyway. After trying the original recipe and finding it easy and delicious we added food colouring to the sugar decorations to give them as gifts. My partner who does not like ginger said he could taste it but it wasn't overpowering and very enjoyable. I found there was enough flavour for taste although on the 2nd batch we added extra cinnamon and cloves as I enjoy them. We then tried freezing half the batch and making the biscuits a week later and this worked although you do have to make sure the mixture has defrosted and remained chilled. The biscuits lasted at least 7 days and were still tasting fresh.
