Honey-Orange Marinated Salmon

INGREDIENTS

  • 1/3 cup reduced-sodium soy sauce
  • 1/4 cup orange juice
  • 1/4 cup honey
  • 2 green onions, thinly sliced
  • 1 tablespoon olive oil
  • 1 tablespoon sherry or apple juice
  • 1 tablespoon minced fresh ginger root
  • 1 pound salmon fillet

DIRECTIONS

  1. In a large resealable plastic bag, combine the first seven ingredients. Add salmon. Seal bag and turn to coat; refrigerate for 1 hour, turning several times.
  2. Line an 8-in. square baking dish with foil; coat the foil with nonstick cooking spray. Drain and discard marinade. Place salmon in prepared pan. Bake at 350 degrees F for 30-40 minutes or until fish flakes easily with a fork.

Nutritional Analysis: 4 ounces cooked salmon equals 238 calories, 13 g fat (3 g saturated fat), 67 mg cholesterol, 261 mg sodium, 5 g carbohydrate, trace fiber, 23 g protein. Diabetic Exchanges: 3 lean meat, 1 fat, 1/2 starch.

This was really good. I did change the soy sauce to 1/4 cup (instead of 1/3). The other change I made was: put half of the marinade on the fish for 2 hours. I reserved the rest of the marinade and reduced it on the stove to serve as a sauce over the salmon. Delicious. Thanks for the post.

Simply delicious! I used powdered ginger and also had to use onion flakes but I am making it again soon and will make sure to have the fresh onion on hand. Also added fresh minced garlic. I reserved some of the marinade and reduced it down in the stove. I poured it over the fish when done and served with rice and a vegetable salad. This is now my favorite asian salmon recipe.

Excellent recipe! Delicious! But please do NOT disgard the marinade. You will want to reduce it and make it a sauce. So sweet and fantastic. My wife was very impressed with this one. I'm sure chicken is delicious with this marinade and sauce. Thanks for the wonderful recipe.
