INGREDIENTS
1/3 cup reduced-sodium soy sauce
1/4 cup orange juice
1/4 cup honey
2 green onions, thinly sliced
1 tablespoon olive oil
1 tablespoon sherry or apple juice
1 tablespoon minced fresh ginger root
1 pound salmon fillet

DIRECTIONS
In a large resealable plastic bag, combine the first seven ingredients. Add salmon. Seal bag and turn to coat; refrigerate for 1 hour, turning several times.
Line an 8-in. square baking dish with foil; coat the foil with nonstick cooking spray. Drain and discard marinade. Place salmon in prepared pan. Bake at 350 degrees F for 30-40 minutes or until fish flakes easily with a fork.

Nutritional Analysis: 4 ounces cooked salmon equals 238 calories, 13 g fat (3 g saturated fat), 67 mg cholesterol, 261 mg sodium, 5 g carbohydrate, trace fiber, 23 g protein. Diabetic Exchanges: 3 lean meat, 1 fat, 1/2 starch.

This was really good. I did change the soy sauce to 1/4 cup (instead of 1/3). The other change I made was: put half of the marinade on the fish for 2 hours. I reserved the rest of the marinade and reduced it on the stove to serve as a sauce over the salmon. Delicious. Thanks for the post.

Excellent recipe! Delicious! But please do NOT disgard the marinade. You will want to reduce it and make it a sauce. So sweet and fantastic. My wife was very impressed with this one. I'm sure chicken is delicious with this marinade and sauce. Thanks for the wonderful recipe.

Simply delicious! I used powdered ginger and also had to use onion flakes but I am making it again soon and will make sure to have the fresh onion on hand. Also added fresh minced garlic. I reserved some of the marinade and reduced it down in the stove. I poured it over the fish when done and served with rice and a vegetable salad. This is now my favorite asian salmon recipe.

This was very good. I baked at 400 degrees for about 20 minutes though since I was in a hurry. thanks for a great recipe.

Wonderful! Extremely tasty, a great balance of all the ingredients. My fiancee cooked this for me one night when I wanted him to do something special for me. It was very simple, and very tasty. When we cook this tonight, we'll save some of the sauce for a reduction-topping. We served it with jasmine rice. Tasty!

This was a quick, easy and delicious recipe. I kept everything the same except I changed the soy sauce to 1/4 cup as suggested in the other reviews. I also added a little more honey, about 1/4 cup more.I saved about 1/3 cup of the marinade to use for basting the salmon while it was in the oven.I marinated the salmon for an hour and a half and only baked it for about 35 mins so that it wouldn't be dry. Using the extra marinade at the end for basting made the sauce thicken and it actually glazed the salmon perfectly. Thanks for the wonderful recipe.

Oh so yummy. Instead of using soy sauce I used Liquid Aminos and I used OJ concentrate instead of Juice, otherwise I used the same recipe. What a great treat and my boyfriend loved it! Thank you.
