Honey-Nut Chicken Stir-Fry

INGREDIENTS
1 tablespoon cornstarch
3/4 cup orange juice
1/4 cup honey
3 tablespoons reduced-sodium soy sauce
1/4 teaspoon ground ginger
2 cups sliced celery
1 1/2 cups sliced carrots
4 teaspoons canola oil, divided
1 pound boneless, skinless chicken breasts, cut in 1/2-inch strips
1/4 cup coarsely chopped peanuts
Hot cooked rice

DIRECTIONS
In a small bowl, combine the first five ingredients until smooth; set aside. In a nonstick skillet or wok, stir-fry celery and carrots in 2 teaspoons oil until crisp-tender. Remove and keep warm. In the same skillet, stir-fry chicken in remaining oil until no longer pink.
Return vegetables to the pan. Stir orange juice mixture and add to the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Sprinkle with nuts. Serve over rice if desired.

Nutritional Analysis: One serving (1 cup chicken mixture, calculated without rice) equals 348 calories, 11 g fat (1 g saturated fat), 66 mg cholesterol, 636 mg sodium, 34 g carbohydrate, 3 g fiber, 30 g protein. Diabetic Exchanges: 1 starch, 1 vegetable, 1 fruit, 1/2 fat.

I thought this was a good base recipe, but it needed something more--the honey was a little overpowering. I think next time I'll use more soy sauce and less honey, fresh ginger instead of ground, and maybe some red pepper flakes. Like I said, a good base though.

I thought this was a great basic recipe for stir fry. I did make a few changes. I first sauted onions and garlic, then added a bag of frozen stir fry veggies. Overall, very tasty!

Loved it! I don't usually try recipes that haven't yet been reviewed, but this time I was looking for something specific and decided to give it a try. I love this recipe because it is easy, healthy and has ingredients I usually have on hand. I added 2 chopped green onions and 2 cloves of garlic to the veggies. The sauce is delicious and just the right amount. Thanks for a great recipe!

This is so easy to prepare; in fact, so easy that my son's scout group has prepared it out on the camp site. To the basic recipe I add 1 chopped onion and some red pepper flakes to give it some heat. We prefer cashews to the peanuts and we use a brown/wild rice blend. This is one of my family's favorites.

This was a big hit for dinner; my husband really liked it. The only thing I changed from the recipe was to use cashews instead of peanuts. The ginger adds a nice, subtle flavor and I was surprised to taste more orange than honey in the sauce. I might experiment with the proportions when I make it again... and I will definitely be making it again!

I followed the recipe as written. It was very easy. My daughters (7yo & 4yo) liked this and would eat it again. My husband gives it "3 stars" but only because it is chicken and not mashed potatoes. He did admit that he liked the sauce.
