Homemade Valentine's Chocolates

Recipe by

"Find yourself a nice decorative box to put these in. It doesn't hurt if it has the word 'love' on it. And then you present these as your gift for Valentine's Day. The flavor profile for these is just perfect: dark chocolate with just a hint of warmth."

  1. Place chocolate into a bowl; add chipotle pepper and salt.
  2. Heat cream in a small saucepan over medium-low heat until it comes to a boil. Pour cream over chocolate and let stand for 3 minutes.
  3. Stir gently until chocolate mixture is completely smooth. Pour chocolate mixture out onto a sheet of plastic wrap on a work surface. Pick up one edge of the plastic and roll the chocolate into a rough log shape. Continue to roll, wrapping chocolate in the plastic. Refrigerate until chilled and firm, 30 minutes to 1 hour.
  4. Place cocoa into a small bowl. Unwrap chocolate and cut in half crosswise; cut each half into halves lengthwise. Roughly cut candy into 1/2-inch square 'stones'. Place the chocolate pieces into the cocoa and toss gently to coat.

I made this for my boyfriend who loves very dark chocolate. He took one bite and said "this is some serious chocolate". He loves the soft smooth dark chocolate.

The taste is spot on with just the right amount of heat!!! I could not however get the chocolate to set. I tried twice. I had to pour each batch into a pan and leave in the refrigerator over night. I rolled them into truffles and even had to put the pan back into the refrigerator during the process as well as before coating with cocoa powder.

The trick to making this work is before putting it on the plastic wrap, is letting it set up a bit in the fridge - maybe 5 or 6 minutes... I tried it twice EXACTLY like te recipe called for, and the chocolate was just too loose to roll. So, it dawned onme to try a few minutes in the fridge first, and voila!

It is pretty good, but you need to add a teaspoon of wax to make the chocolates stay together. But the rest is pretty good ^^

Not being a ice fan, my husband would not have appreciated the pepper part. They were excellent all the same. I'll have o make them for myself and friends, experimenting with pepper and other spices. Thank you!!!!
