1 egg white
2 teaspoons garlic powder
2 teaspoons celery salt
1/4 teaspoon salt
1/2 teaspoon liquid smoke flavoring
3 cups whole unblanched almonds, toasted and cooled

DIRECTIONS
In a bowl, whisk egg white until foamy. Add garlic powder, celery salt, salt and liquid smoke; stir until blended. Add almonds and stir until well coated. Evenly spread almonds in a 15-in. x 10-in. x 1-in. baking pan coated with nonstick cooking spray. Bake at 300 degrees F for 30 minutes, stirring every 10 minutes. Cool. Store in an airtight container.

These are pretty irrestible and much better than brands you buy in the store because you can control the salt content. I did cut out the regular salt, cut the celery salt to 1 tsp and increased the liquid smoke. Instead of toasting the almond prior, I did it after adding all the seasonings as they more readily absorbed the flavors. Great and I will be more in the future.

I made these for Christmas and they are very good and were very easy. I would've liked then to be a little more spicy and next time I make them, I'll throw in somce chili powder and red pepper. I toasted the almonds only once in a half-convection (fan, but no heating element in fan) for 20 min and they were well toasted. I will make this recipe angain for sure!

I had never eaten smoked almonds so when I ran across a candy recipe that called for them, I went to buy them. Shortly thereafter I was looking for a more cost effective alternative. These are delicious. The one thing that I did differently was to NOT toast the almonds first. I just thought that 30 minutes at 300 degrees was plenty and I was satisfied with the end product. These were easy to make and took about two minutes to prepare for the oven since I left out the first toasting. I'll be making them again since it is the season for baking and candy making! Thanks for sharing a tasty recipe!
