Homemade Potato Salad

INGREDIENTS
1 tablespoon sugar
2 teaspoons all-purpose flour
1/4 teaspoon ground mustard
Pinch salt
1 egg, beaten
1/3 cup water
1 tablespoon vinegar
3/4 cup mayonnaise or salad dressing
5 large potatoes, peeled and cubed
4 hard-cooked eggs, chopped
1 cup chopped celery
1/4 cup chopped green onions
salt and pepper to taste

DIRECTIONS
In a small saucepan, combine the sugar, flour, mustard and salt. Combine egg, water and vinegar; stir into dry ingredients until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes Remove from the heat; cool slightly. Stir in mayonnaise. In a bowl, combine the potatoes, hard-cooked eggs, celery, onions, salt and pepper. Add the dressing and toss gently to coat. Refrigerate until ready to serve.

Needs a little help, but a GREAT basic recipe. Needs a lot more sugar. Also I use MIRACLE WHIP only. ( My opinion its the only way to go with potato salad). I added 6 hard boiled eggs and chopped my taters and eggs small. I did a small white onion chopped super small. I didnt do celery or any other veggie. I taste the dressing before I dump it on as the sugar in the dressing makes it.
