Homemade Potato Salad

INGREDIENTS

  • 1 tablespoon sugar
  • 2 teaspoons all-purpose flour
  • 1/4 teaspoon ground mustard
  • Pinch salt
  • 1 egg, beaten
  • 1/3 cup water
  • 1 tablespoon vinegar
  • 3/4 cup mayonnaise or salad dressing
  • 5 large potatoes, peeled and cubed
  • 4 hard-cooked eggs, chopped
  • 1 cup chopped celery
  • 1/4 cup chopped green onions
  • salt and pepper to taste

DIRECTIONS

  1. In a small saucepan, combine the sugar, flour, mustard and salt. Combine egg, water and vinegar; stir into dry ingredients until smooth. Bring to a boil over medium heat, stirring constantly. Cook and stir for 2 minutes Remove from the heat; cool slightly. Stir in mayonnaise. In a bowl, combine the potatoes, hard-cooked eggs, celery, onions, salt and pepper. Add the dressing and toss gently to coat. Refrigerate until ready to serve.

Needs a little help, but a GREAT basic recipe. Needs a lot more sugar. Also I use MIRACLE WHIP... MORE
