I found this recipe last spring and it has been our Sunday tradition ever since! I use 3C white and 3C WW flours. To one cup of mix we add 1C buttermilk, 1 egg, and 1 tsp vanilla. I'm just getting getting ready to make a batch to take on our family vacation! Thanks for a great recipe!!

Very Good and economical! I made a double batch of dry mix and store it in a plastic cereal container. For every two cups of dry mix, I add 3 eggs, 2 tbs oil, and about 2 cups milk. I will never go back to store brand mix again.

I was making pancakes over the weekend and ran out of the boxed mix. I remembered I had saved this recipe and whipped it up. I made one batch of the plain pancakes and thought they were great. My husband thought they were a little too dense. They were really yummy with strawberry-rhubarb jam!

Fast, excellent, and I always have all the ingredients on hand! I was making Blueberry Flax Pancakes and only had biscuit mix, so I made this up. For the half-recipe of the pancakes, I only needed an eighth recipe of this so I used: 3/4 cup all-purpose flour, 1½ TBS sugar, 5/8 tsp baking powder, 1/4 tsp baking soda. The pancakes turned out very good, and this mix took only a couple minutes to make! Thanks for sharing, Wendy!

I made this mix for hubby to be able to make pancakes during the week before school. This is great to use instead of buying a box at the store. We use this mix once a week. When mixing up I always add 1 - 2 tablespoons of ground flaxseed.

This Recipe is Perfect for my family. It is easily adjusted for food allergies, and turns out GREAT every time. I've made it several times now, and it's now one of our staples. Always have it on hand....

Made this recipe one morning and fell in love with it! Every time we make the pancakes they are fluffy and moist. It's great too because I just keep the dry mix in my pantry and it is quick and easy on those Saturday mornings after we slept late and want a good breakfast. We have added many different ingredients like blueberries, chocolate, and bananas and everything always turns out great! I will make it again and again!

We made as directed, very good. We even used for waffles. We do store it and make 1 c of mix at a time. We have not tried the fruit yet. Nice change.

WOW. These were great! I'm not particularly a big fan of pancakes, but I make these once for an at-home buffet, and have loved them ever since. The only thing was, instead of making 16 (as suggested), my batch only make 12. Oh well. Maybe it was just me. But no matter, 12 or 16, these 'cakes were AWESOME.

I finally decided to make pancakes for my husband after 7 years of marriage. I came across this recipe and now I'll be making these frequently. So easy and very tasty (I made the plain one's). We had no problem with the directions, but strongly recommend making the dry mix part of the recipe as presented (or 2X it)to always have on hand. Then it's easy to know to add one cup of the dry mix to the 1 egg and 3/4 cup of milk.

I had a small issue that was unrelated to the recipe itself...but I scaled it down to 4 instead of 16 servings. It was only going to be my daughter & myself having pancakes, I didn't want to have a bunch of leftover pancakes or leftover mix. Anyway, the only scaling issue was that it said "1/4" of an egg. HA! So, I made the scaled down version, and used 1 whole egg, and enough milk to make it the right consistency. I did not have any whole wheat flour, so I just used all purpose for both measurements. B/c my daughter is a big CHOCOLATE fan, I substituted 1/4 cup of cocoa powder for 1/4 cup of flour. I was worried I would have rubbery pancakes b/c of scaling it down, but it turned out really well & they were nice & fluffy!!

This recipe is a bit confusing if you don't read it carefully first (which I did not!) It is a pancake mix to put in your cupboard, and the milk and egg is only the amount per one cup of dry mix. It states that, I know, but for some reason I got confused and ended up with a whole lot more pancakes than I wanted! I liked this recipe because it had no oil, I used only egg whites, and while I would've liked the whole wheat flour, I only had all purpose, which worked fine. I made the banana blueberry kind but added more sugar and 1 1/2 teaspoons vanilla. They were great and we will definately make them again. Oh one more note, you might want to spread them out a little more once you pour them in the pan so you don't have super thick pancakes with uncooked centers.

Perfect in every single way! I have had fruit pancakes almost every day since the first day I made this mix. I used strawberries and bananas, but instead of mixing them in, placed them on top of the (small amount of) batter on the (cool) pan. The pancake spreads as you spoon some batter over the fruit. The first side takes longer than the second. Top it off with extra creamy whipped cream (the only real difference is 5 calories and real sugar vs. corn syrup) and you'll want fruit pancakes for a week, too.

I think I have found the reason some people are having trouble with this recipe. When you alter the serving size, the recipe quantities all update but the written instructions don't. Thus, if you are making banana blueberry pancakes, it will always say "add one cup of mix" to the milk, egg, and banana mixture, even though those other amounts have changed. Hopefully this can be fixed because when they work, they are delicious!

Just made up a batch of this for 'breakfast for dinner' and they were WONDERFUL! I had to add a tiny bit more milk to the batter as it was a bit thick, but I find that with most commerical mixes as well so it was no biggie. My family thoroughly enjoyed them... this is definitely going to be a pantry staple now!
