Homemade Pancake Mix

INGREDIENTS

  • 4 cups all-purpose flour
  • 2 cups whole wheat flour
  • 2/3 cup sugar
  • 2 tablespoons baking powder
  • 1 tablespoon baking soda
  • ADDITIONAL INGREDIENTS FOR PANCAKES:
  • 1 egg
  • 3/4 cup milk
  • ADDITIONAL INGREDIENTS FOR BLUEBERRY BANANA PANCAKES:
  • 1 egg
  • 3/4 cup milk
  • 1 medium ripe banana, mashed
  • 3/4 cup blueberries

DIRECTIONS

  1. In a bowl, combine the first five ingredients. Store in an airtight container in a cool dry place for up to 6 months.
  2. To prepare pancakes: In a bowl, combine egg and milk. Whisk in 1 cup pancake mix. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown
  3. To prepare blueberry banana pancakes: In a bowl, combine egg, milk and banana. Whisk in 1 cup pancake mix. Fold in blueberries. Cook as directed above.

No complaints at all - in fact these were super delicious! Had no trouble with the ingredients, they weren't dry at all. Perhaps the previous cook combined all ingredients listed, intead of keeping in separate portions as instructed. I will definitely be making these again. Thanks!!!

I made this mix for hubby to be able to make pancakes during the week before school. This is great to use instead of buying a box at the store. We use this mix once a week. When mixing up I always add 1 - 2 tablespoons of ground flaxseed.

I finally decided to make pancakes for my husband after 7 years of marriage. I came across this recipe and now I'll be making these frequently. So easy and very tasty (I made the plain one's). We had no problem with the directions, but strongly recommend making the dry mix part of the recipe as presented (or 2X it)to always have on hand. Then it's easy to know to add one cup of the dry mix to the 1 egg and 3/4 cup of milk.
