4 cups all-purpose flour
2 cups whole wheat flour
2/3 cup sugar
2 tablespoons baking powder
1 tablespoon baking soda
ADDITIONAL INGREDIENTS FOR PANCAKES:
1 egg
3/4 cup milk
ADDITIONAL INGREDIENTS FOR BLUEBERRY BANANA PANCAKES:
1 egg
3/4 cup milk
1 medium ripe banana, mashed
3/4 cup blueberries

DIRECTIONS
In a bowl, combine the first five ingredients. Store in an airtight container in a cool dry place for up to 6 months.
To prepare pancakes: In a bowl, combine egg and milk. Whisk in 1 cup pancake mix. Pour batter by 1/4 cupfuls onto a lightly greased hot griddle; turn when bubbles form on top of pancakes. Cook until second side is golden brown
To prepare blueberry banana pancakes: In a bowl, combine egg, milk and banana. Whisk in 1 cup pancake mix. Fold in blueberries. Cook as directed above.

This recipe is a bit confusing if you don't read it carefully first (which I did not!) It is a pancake mix to put in your cupboard, and the milk and egg is only the amount per one cup of dry mix. It states that, I know, but for some reason I got confused and ended up with a whole lot more pancakes than I wanted! I liked this recipe because it had no oil, I used only egg whites, and while I would've liked the whole wheat flour, I only had all purpose, which worked fine. I made the banana blueberry kind but added more sugar and 1 1/2 teaspoons vanilla. They were great and we will definately make them again. Oh one more note, you might want to spread them out a little more once you pour them in the pan so you don't have super thick pancakes with uncooked centers.

I just made these this morning and they were wonderful! However, you MUST add 1 tsp. salt to the dry mix or they will be bland. Provided you make this addition, they will be great. To the reviewer whose pancakes were flat - you may want to check the date on your baking powder and/or baking soda. Elderly baking powders or sodas will not give you the lift you require. I, too, am guilty of keeping both these items for far longer than I should because I simply don't use them up fast enough.

I made this mix for hubby to be able to make pancakes during the week before school. This is great to use instead of buying a box at the store. We use this mix once a week. When mixing up I always add 1 - 2 tablespoons of ground flaxseed.

This recipe worked out REALLY well for me. Don't see consistancy problems at all. I DID make an addition which was one tsp of vanilla to the mix when I went to make it and they turned out MARVELOUS.

No complaints at all - in fact these were super delicious! Had no trouble with the ingredients, they weren't dry at all. Perhaps the previous cook combined all ingredients listed, intead of keeping in separate portions as instructed. I will definitely be making these again. Thanks!!!

I finally decided to make pancakes for my husband after 7 years of marriage. I came across this recipe and now I'll be making these frequently. So easy and very tasty (I made the plain one's). We had no problem with the directions, but strongly recommend making the dry mix part of the recipe as presented (or 2X it)to always have on hand. Then it's easy to know to add one cup of the dry mix to the 1 egg and 3/4 cup of milk.

Awesome - make some of the best pancakes we have had. Nice and fluffy. We even subbed buttermilk for the regular and oh my will these get made a lot in our house.

The measurements called for to activate the mixture appear to be incorrect. I needed to use much more milk than called for to get a batter-like consistency. These rose so much while cooking, they ended up tasting more like muffins. Plus, the flavor was only so-so. It was a nice idea, but I think it could be a lot better.

I think the first reviewer must have read the recipe wrong. I had no problems with consistency at all. I didn't try it with blueberries and banana, but they were still really good. Careful of setting your griddle--they burn easily.
