I was pleasantly surprised at how well this turned out and how easy it is to change up. Best results have been with fresh herbs.

We thought this was a really yummy recipe. (We were pleasantly surprised that it was so flavorful.) I doubled the recipe, and as with many recipes, it didn't need double the salt. I would cut back a little on salt if I double it again. I also added fresh minced sage, but I think I would skip it next time. I think the recipe would be delicious as it's written.

Not a dead ringer for the Jenni-O sausage, but passible. Used quite a bit of fresh minced garlic, 1 T fennel seed ground in spice grinder, 2 t Splenda (too much, do NOT double the sugar component!), omitted the salt and this was a mistake...definitely needs salt, 1 T Italian seasoning, 1 t onion powder, sprinkle of red pepper flakes. Next time I will use the original amount for sweetner and .5 t salt. I am trying to cut down on salt, but no salt was a bad idea. I would also add more red pepper flakes...maybe .25 t? I don't like very spicy food. All in all, can't complain for basically 1/2 the cost of prepared italian sweet turkey sausage.

I love this sausage recipe just as it is. My local grocery store broke my heart and stopped carrying turkey sausage. This recipe more than makes up the loss. This is much cheaper than buying it anyways. Wonderful, veristale recipe. I use it in everything: meatballs, breakfast casserole, sausage patties, etc. My husband is pushing for turkey meatball subs soon. :D

The absolute best sausage I have ever eaten. I do add a little Cyane pepper to give it some zip but this is a awsome recipe. I let mine set over night in a ziplock bag in the fridge - The smell drives me nuts until I cook it. I use it for breakfast sausage, Its just that good.

Great base recipe, thanks for the idea. Only four stars because I modified according to what I had on hand and what sounded good to me. Used fresh ground garlic, replaced fennel and sage with 1 1/2 teaspoon dry Italian seasoning and used a couple dashes of red pepper flakes, cut sugar to 1 tsp and ommitted pepper.

this was a really good recipe. I found that less garlic was better though - it was quite a lot of garlic (and I love garlic!) This recipe has made it into our regular dinner rotation.

Delicious! I did not have the fennel seed either, so I substituted fresh basil and sage. I also added 2 cloves fresh garlic and 1/4 of an onion. Throw in some red pepper flakes and some cayenne because I like it a little spicy. YUMMM

I made this with lean beef instead of turkey b/c that's what I had on hand. I didn't let it set over night and it was still great. I browned it in a skilled and used it on pizza. My husband said it was the best sausage he's ever had. UPDATE: I made this with turkey and a 1/4 tsp crushed red pepper added. Perfect level of spiciness for our family. This will be your favorite sausage if you like fennel.

I followed the advice of others and doubled the spices. Since I was using 2 1/2 lbs. of ground turkey I doubled the amounts and added a little bit more. I added the crumbled ground turkey sausage to some bar-b-que beans for our church picnic - the beans were the hit of picnic, everybody loved them. I will no longer buy turkey sausage, instead I will make my own - thanks!!

Really needs more spice to be good, and more heat. Tastes too much like the meat with a little hint of spice. I like more flavor in my sausage. Will use again but will modify. More oregano, more cayenne, not sure what else yet. We like the fennel, but it is strong so you either like it or hate it.

I left out the sugar since DH is diabetic. A fantastic recipe if you're looking to cut the fat from your diet, even though I initially looked for an Italian sausage recipe because I didn't want to make a stop at the supermarket. It's a keeper!

This turned out great. I added sage, basil, and thyme to the mix as well. My spice grinder long ago bit the dust so I chopped the fennel to a powder using a hand chopper, which worked fine. Tasted better than any I've bought and so much healthier.

Outstanding recipe. I was looking for a turkey sausage recipe so that I could stop purchasing it at the grocery store. All of the grocery brands have too much salt for my taste. This recipe was seasoned just right. Next time I will add some red pepper flakes to make it into 'hot sausage'. I formed it into patties and made sandwiches with grilled onions and green peppers. Yum!!!
