6 pounds medium potatoes
2 cups chopped green pepper
2 cups chopped sweet red pepper
1 large onion, chopped
1/2 cup butter or margarine
1 teaspoon salt
1 teaspoon pepper

DIRECTIONS
Place potatoes in a Dutch oven and cover with water. Bring to a boil; cover and simmer for 15-20 minutes or until potatoes are tender but still firm. Cool slightly; peel and shred. In a Dutch oven, saute the peppers and onion in butter. Add the shredded potatoes; sprinkle with salt and pepper. Cook until golden brown.

Well, this turned out really good but I gave it a 3 because I had to make a lot of changes. First, I only had green pepper and I didn't want to use a dutch oven. I peeled and chopped the potatos and boiled the for 20 minutes, then let them cool. Then I cooked everything (onion, pepper, butter) together in a skillet over medium. Will definitely make again.
