Awesome! While these fries did take some effort, I think the amount of effort is terribly over-hyped. As a previous poster said, if you want it quick, you've got to deal with a lower quality. All in all, these fries were not a lot of time or effort. I have made homemade fries before but was always disappointed in the fact that it was impossible to get them crispy! Or get them to show any character, for that matter. This recipe was a dream come true. For my tastes, the amount of seasoning was plenty, but I don't see any problem with changing it up to suit your tastes. If your fries didn't turn out crispy and delicious, then, yes, you did something wrong. One thing I did that was not in the recipe was that I let the raw fries soak in icewater for a good 10 minutes and I even thought about throwing some ice in the batter (many restaurants do this and it works). I figured the ice soak would be plenty, though and after taking them out of the ice bath, I laid them out on a paper towel to soak up the water before throwing them in the batter. I threw a couple at a time into the fryer and then after they had been in there about a minute, I used a metal fork to stir them up and separate them. Worked great for me! My husband just used catsup for dipping but I went with ranch. I will definitely be using this recipe again and again and again!!! We both loved these restaurant-worthy fries!
