I'm sure I could have made great biscuits with this recipe. I added the cheese to the dry ingredients before mixing with the wet to minimize overmixing. I'm sure with a bit more mixing, I would've been able to roll this out. A full tbsp of baking powder seems like a typo.
This is a decent base but isn't very flavourful. If I tried this again, I'd probably use half whole wheat flour, decrease the baking powder to a teaspoon and add cayenne pepper or oregano (approx 1/2 to 1 tsp).
I made 6 muffins and 12 mini muffins. I baked the regular muffins for 22 minutes and the mini muffins for 15.
